There is more here than a scoop or two. La Macelleria also serves Segafredo coffee, a Bologna-based brand, and offers gelato and semifreddo cakes for birthdays, weddings, parties, special dinners and corporate occasions. The website also lists workshops, combining practical exercises on gelato-making machines with the theory behind the craft. That makes the venue relevant for a casual dessert stop, a coffee break or a planned celebration, while the cakes provide an option when you need something to share or take to an event.
One of the more unusual features is the exposed Laboratorio del Gelato. Rather than keeping production entirely behind the scenes, the space allows visitors to see the gelato-making process and notice the aromas of roasting, caramel and sugar-coated nuts. The lab uses Italian equipment and brands, and the recipes use natural stabilisers in small quantities. It is a detail that gives the visit some context: this is presented as a place focused on the method and tradition of gelato, not simply a counter selling frozen desserts.
The business was founded in 2012 by Matteo and Matteo, who came from economics backgrounds and wanted to bring the style of gelato associated with their home city, Bologna, to Australia. Their training and experience included work with Bologna gelateria La Sorbetteria Castiglione and study at Gelateneo. For West End locals, the combination of Italian-style gelato, espresso, cakes and a visible laboratory suits several kinds of visit: a solo coffee and sweet treat, an easy date, or a family and group outing where different people can choose from gelato, sorbetti and drinks.
