Eclair at the Bay

Eclair at the Bay is a modern patisserie in Brisbane focused on choux pastry and celebration desserts. Its range includes éclairs, profiteroles, craquelins, tarts, cakes and croquembouches, with products made fresh daily. The selection changes with the seasons and what is at its best, so the cabinet can look different from one visit to the next. Six signature éclairs are made each week, alongside a rotating flavour, giving regulars a reason to return and making the shop suitable for both a planned treat and a special occasion.

The éclairs are the clearest signature. The current menu includes chocolate, lemon, apple crumble, tiramisu and salted caramel versions, as well as a weekly flavour that is announced on Instagram. Other notable offerings include vanilla profiteroles, pistachio, hazelnut and passion fruit craquelins, and several fruit, chocolate and caramel tarts. For larger celebrations, the patisserie also makes cakes, entremets and croquembouches. Gluten-free desserts are available, including the Choco-Pillow and Coffee Bean, although the kitchen also handles gluten, nuts, dairy and eggs and is not an allergen-free facility.

The business began in Byron Bay in 2020 with a trio box of éclairs made for Mother’s Day. After receiving 100 orders on its first day, it grew through home deliveries, weekly markets and celebration work, including dessert tables, mini éclairs and croquembouches for events. It opened a patisserie in Byron Bay in 2023 before closing that shop and moving north in November 2025. The Brisbane chapter brings the same focus on fresh pastry and occasion desserts to its current Newstead location.

Eclair at the Bay suits anyone looking for a polished individual dessert, a box to share or something more substantial for a birthday, wedding or corporate event. Pre-orders, catering and event enquiries are available, while the walk-in shop is open Wednesday to Sunday from 9am to 6pm.
